        Pork Rib Congee

        It’s time to bust out some keto comfort food as the temperature starts getting cooler and the autumn colors are emerging. Try this amazing porridge for an amazing meal and warm cozy feels! ⁣⁣

        "The best part of living low-carb is that I don't feel deprived of fried rice and porridge (congee). So, when I made some regular pork ribs porridge for my carb eating family last weekend, I planned it in such a way that I could enjoy it with my low-carb version too.

        I boiled the pork ribs and dried oyster with water first until tender then remove the ingredients. Used some of the broth and ingredients for my low-carb version using zero-carb rice from Miracle Noodle."


        INGREDIENTS:

        2 packs of Miracle Rice from Miracle Noodle
        800 g to 1 kg pork ribs⁣
        100 g dried oysters⁣
        500 ml water or chicken stock⁣
        1 tsp Konjac flour⁣
        Salt & pepper to taste⁣
        Sesame oil⁣
        Fried shallots⁣
        Spring Onions for garnishing⁣

        DIRECTIONS:

        1. Rinse, drain, and boil Miracle rice for 2 minutes. Drain and set aside.⁣

        2. In a pot, add water or chicken stock, pork ribs, and dried oyster. Bring to boil then reduce heat and simmer until tender.⁣

        3. Add Miracle rice, seasonings, and simmer for a while. Adjust water and taste accordingly. Thicken with konjac flour.⁣

        4. Dish up and drizzle with sesame oil. Top with fried shallots and chopped spring onions.
