1. For the pork red sauce, add olive oil to a large heated skillet. Saute garlic and shallot until shallot are translucent. Add sausage and cured pork to skillet cook for 4-5 minutes until pork is done. Drain off excess fat.
2. Add crushed tomatoes and Italian seasoning. Stir and simmer for 15-20 minutes.
3. Meanwhile rinse noodles for 1-2 two minutes, boil for 2 minutes in pot, drain, then return noodles back to empty hot pot. Cook until all the water has absorbed.
4. Add olive and garlic to skillet with noodles. Cook for 2-3 minutes and add kale. Saute for additional 2-3 minutes or until kale has wilted.
5. Transfer noodles to skillet with pork red sauce. Mix well and simmer for 2-3 minutes so that the meat sauce is evenly distributed with noodles.
