'Miracle' Shirataki noodle bowl with creamy cilantro yogurt dressing, zucchini, carrots, onion, mushrooms, and egg.
These noodles sound too good to be true at 0 cal/carbs, but are actually a great swap! They're made from about 97% water and 3% Japanese white yam, which is slowly digested and acts as a prebiotic. They're filling with a texture similar to rice noodles and take on flavors of any dish.
For this recipe, I based the dressing on @gjelinarestaurant spiced yogurt, with a few additions.

DRESSING:
Blend all the following together:
1 cup plain coconut yogurt
1/4 tsp toasted and ground cumin seeds
1/4 tsp roasted and ground coriander seeds
1 handful of fresh cilantro
1 tbsp extra virgin olive oil
Juice of 1/2 lemon
1 tbsp tahini
2 cloves of garlic
1/4 tsp salt
2 tbsp white wine vinegar
1 handful of spinach
THE MAIN DISH:
Amounts to preference unless indicated.
Sweet Onions
1 tbsp or less of extra virgin olive oil
1 tbsp of water
Carrots, sliced
Zucchini noodles
Mushrooms
1 pack of Miracle Noodle Angel Hair
1 medium egg
Sesame seeds
DIRECTIONS:
1. Sauté sweet onions with a little EVOO and a tbsp of water until translucent, then add the following: sliced carrots, zucchini noodles & mushrooms.
2. Rinse and drain Miracle Noodle, then dry in a naked pan till all water is absorbed. Add noodles and veggies along with yogurt in your other pan. Cook 3-5 more minutes.
3. Cook an egg over medium while simmering your main dish. Plate the main dish with egg on top, fresh cilantro, and sesame seeds.
