Soupy Rice with Pork Belly

Ambassador Elsie Yan, is delivering a great bowl of health and warmth this evening. Enjoy this soup featuring our Miracle Rice! It pairs perfectly with the rich pork belly and flavors from tamarind and ginger!

"This is such a comfort food for me - soupy rice! It's basically a soup where we add some cooked rice into it before eating. The soup is tangy, savory, sweet and peppery. It's so tasty and appetizing that there would not be a drop left in the bowl. I used pork belly, but you can use pork ribs, chicken or duck meat. You can also use roast pork whereby the soup will be even more fragrant. It helps to use some pork bones to sweeten the soup, or you can use chicken stock too. INGREDIENTS:

1 packet of Miracle Rice
Sliced pork belly (fresh or roasted) 
1 large tomato (cut into 4 pieces)
Salted mustard greens
1 square tofu
3 to 4 dried tamarind slices
Black or white pepper 
3 to 4 ginger slices
Salt or chicken stock powder to taste

DIRECTIONS:

1. Prepare Miracle Rice per instructions on packaging

2. Boil water or chicken stock in a pot. Add all ingredients (except the tofu) and bring to a boil. Use more pepper if you like the soup to have more of a kick. Simmer until the soup is fragrant then add seasonings.

3. Add the Miracle Rice to the soup and simmer for a while to allow flavors to absorb. Add tofu.

4. Dish up, garnish with spring onions and serve hot.
