Thai Peanut Noodles

INGREDIENTS:
Serves 3-4

3 chicken breasts
5 limes
Liquid aminos (or low-sodium soy sauce)
Brown Sugar or sugar substitute
Coconut or olive oil
½ cup smooth peanut butter
1 cup crushed peanuts
Cilantro
Crushed garlic to taste
Sriracha sauce (optional)
2 bags Miracle Noodle Fettuccine
3 red/yellow peppers
Crushed peanuts

DIRECTIONS:

1. Marinate chicken in a mix of juice of 1 lime, ¼ cup liquid aminos, 2 Tbs brown sugar. Let marinate for 3 hours. Cook when ready.

2. While chicken is cooking. Sauté peppers and garlic in coconut or olive oil. Turn down and keep warm.

3. Make peanut sauce using ½ cup peanut butter, 1-2 Tbs warm water, 2 Tbs liquid aminos, the juice from 1 lime, and ½ tsp brown sugar. Mix well until combined and set aside.

4. Prepare Miracle Noodle by opening the package, rinse with water in a colander, add to the pan with sauce to warm. Mix together to combine and add in cut-up cooked chicken to combine everything. Top with crushed peanuts, fresh lime, sriracha, and cilantro. Enjoy!!
