Yvonne shows us what to do when you have random leftover veggies and protein and made a low-carb pasta bake of it with our keto-friendly Miracle Noodle Fettuccini!
"Had a drawer full of vegetables that needed to be cooked off, so I made a 'pasta primavera' of sorts."
INGREDIENTS:
1 package of Miracle Noodle Fettuccini
1 celery stalk diced
3 small asparagus diced
1/2 orange bell pepper diced
1/2 small onion diced
4 oz mushrooms diced
12 oz tomato sauce
1 lb ground Turkey
Italian seasonings
Nutritional yeast- savory
1 cup shredded cheddar
1/2 cup grated Parmesan
1/2 cup avocado oil
DIRECTIONS:
1. Heat oil, add veggies, salt & pepper, and cook until tender.
2. Drain, rinse, and dry noodles in a hot pan.
3. Brown Turkey, add seasonings. Once browned, add sauce and let simmer for 10 minutes. Add veggies.
4. Add noodles to a casserole dish, pour mixture on top. Add cheddar and bake at 350° for 30 minutes.
