The short version

Here’s the simple way to choose. Want a protein-forward meal that holds you? Reach for egg white, because egg white has one of the highest biological values of any protein, so your body uses nearly all of it. Want something light and gentle? Reach for konjac, because it’s almost pure soluble fiber, the gel kind that holds water and feeds the natural bacteria in your gut. Neither one has flour or grain in it, which is why both labels stay so short.

I’m Jonathan Carp, MD, and I’m a dermatologist. Miracle Noodle began in 2006, after friends took me to a small vegetarian restaurant outside Kyoto and I was served a bowl of konjac noodles. Every order ships free, and your first box is risk-free for 60 days.

What is Miracle Noodle made of?

Two simple families. The egg white shapes are egg whites, water and a touch of sodium alginate, an algae extract that holds the strand together. The konjac shapes, also called shirataki, are konjac flour, water and a little citric acid. That’s the whole label.

What’s the difference between egg white and konjac noodles?

It comes down to what you want from the bowl. Egg white is clean protein, 10g a bag. Konjac is almost pure soluble fiber, 5 calories a serving, basically food for the natural bacteria in your gut.

Are Miracle Noodles keto and gluten-free?

Yes to both. The konjac shapes are 1g net carb a serving and the egg white shapes are under 1g of carb a bag, because there’s no flour or grain in either one. No gluten anywhere in the box.

Do I have to cook them?

No. Both families come fully cooked and ready to eat. Drain the egg white shapes and fold them into a hot sauce. Rinse the konjac shapes for about 90 seconds, then let them simmer in your sauce or broth.
